Toronto, Canada to Jeju is an approximately 20.5-hour flight. You can also do a combination of ferry and flight. Traveling from Toronto to Jeju, you'll lose 14 hours due to the time zone difference. Wrap up your sightseeing on the 10th (Mon) to allow time to travel to Gwangju.

You'll find plenty of places to visit near Gwangju: Boseong Green Tea Field Daehan Dawon (in Boseong-gun), Unjusa (in Hwasun-gun) and Gochangeupseong Fortress (in Gochang-gun).
